Old Tom Collins
The Tom Collins is a classic gin cocktail, first recorded by one of the first and most famous mixologists, Jerry Thomas, in 1876. Whereas the classic recipe calls for dry gin, our version is made with Gin 375, an Old Tom style of gin and digestif, with a hint of honey.
What you’ll need
- 1 1/2 oz Gin 375
- 3/4 oz fresh lemon juice
- 3/4 oz simple syrup
- 2 oz club soda
How to prepare
In a shaker, combine all ingredients and shake with ice except the soda. Strain into a chilled glass filled with ice, top with soda and stir gently to combine. Garnish with lemon.
Simple syrup: Bring 250 ml of water to a boil and add 250 ml of white sugar. Stir until sugar is fully dissolved and remove from heat.
